If it comes out of the chamber then the extractor is OK, but if it's not being pitched clear of the gun then the ejector is suspect. Try a new one, as sometimes the old one wears a bit.
OR, given that you have just changed the spring, then consider that it is stiffer than normal and the toggle is not traveling back far enough or fast enough to completely eject the brass. That is where I'd look. While hot ammo is not recommended in the P08, personally if I had some around I'd try a couple of rounds to see if THEY eject.
