Glad you are not altering the piece.
Recut or refinished grips look ridiculous on well worn original pistols.
If it was damaged or mismatched, I'd say go ahead.
Like finding an original condition antique bike or car in a barn. Best left with the venerable age spots.
The restoring craze going on is truly alarming to us traditional dinosaurs.
Not cool.
