The ejector itself is a spring. The reddish color is somewhat close to what would result from its being heat treated ("drawn down") to make it a spring, the temperature necessary for which is much greater than that at which a part is strawed. It may be that military ejectors occasionally skipped the subsequent bluing... but this is conjecture.
