If you follow the link to the diary you will find the very same "quotes" by Alvin York, but without the bad language. Seems like the author spiced up the original diary in an attempt to glorify Sgt York, but the end result it's more like sacrilege. I actually quit reading after a few paragraphs, it didn't really sound like a trustworthy source... and that's mildly put.

The diary was interesting though, it's a long read but most likely worth the time.
