Default what parts should I buy to shoot?

What parts are the most likely to break on a luger? I want to start supporting the Lugerdoctor with my money!

Get a spare, complete toggle train, an ejector and hold-open...if anything is going to break, it is 99.99% that it will be one of these.

Hope I can jump in here too, how about the firing pin? Usually a pretty durable item?

A spare firing pin is a good idea. It would be included in the "complete toggle train" suggested by Tom (a complete train would include the breechblock with firing pin).

Yep,

Ejector, extractor, a good assortment of springs, a decent magazine and 'shooting grips' make a good start. A fluted firing pin and the firing pin retainer will come in handy.

If you plan on shooting a 1906 grip-safety version, add a grip safety spring to the list.

I wouldn't

Quality of those is not up to scratch. I'd go for a refinished or slightly mismatched Mauser from the 1937 - 1942 era.
