I've done it once or twice. Just take your time and if you "goof"; you can always repair with epoxy mixed with "grip dust" and proceed. I'd start with not so nice grips.

Once you've mastered it, you may want to do it again with nicer grips.

My "no matching parts" 1900 Luger is even more so now. I picked up a "shooter grade" (hah) Luger Carbine the end of last year. It was very difficult get the sideplate off. After doing some reading and comparisons. I determined it had a sideplate from a 1906 type or later Luger. I put the correct type sideplate that was on the 1900 Luger on the carbine and the later type sideplate on the 1900 Luger. I shot both guns yesterday. The longer lever on the 1906 type sideplate improved the trigger on the 1900 Luger quite a bit. The Luger Carbine trigger did not seem to be much harder than before. On the 1900 Luger I would like to replace the mainspring/recoil spring with a new made replacement flat spring. I've not seen any sources mention how this is done. Anyone have any tips for me?
