Your question is so general that there really isn't a valid reply that would fit on this page.
This is very complex concept that takes years of exposure to Lugers and their grips. There are some tell tale signs of modern manufacture and materials, but explaining them would take at least a chapter in a book. Hang out with an experienced collector or collectors... read all you can here and in published references. Unfortuately, There is no shortcut to a degree at "Luger" University... Try a question a bit more specific like this: "How can I tell if the grips on my 1917 Erfurt Luger are authentically original to this gun?" That is a specific question that someone might be able to advise you on... Try again please.
