What ever you do don't let the grips get saturated with oil. The oil will break down the fibers in the wood and they will get crumbly.
The best way would probably be to put them upside down. Balanced on the sights in a sturdy dry cabinet. And just wipe the metal down with an oiled rag after handling them.
Put some desicant packets in the cabinet to absorb moisture. These are the little packets of silica that come packed with electronics. They even put them in bags of pork rinds and other food products, marked "do not eat". Just make sure they do not touch the pistols.
