While I know JB Weld to be durable stuff... I doubt that it would be satisfactory for more than just a short time in this capacity because of the stresses that are put on the joint between the pistol and the stock iron during firing...
If you want a good fit, I would recommend that you get a real stock iron, or fabricate the appropriate replacement parts for your replica stock iron out of steel to create the fit you desire...
Of course, if you are going to go the JBW route simply for a mock display of the gun and stock, then go for it... file down the excess JBW to fit and paint it black... that should make a good display...
