Brownells "steel white" will remove bluing without damaging the steel itself.

Yes, you can re-straw the parts yourself, but it requires precise temperature control around 470 to 480 Degrees Fahrenheit. There is a chart published in the information section of this forum listing the correct temperatures for various coloring of carbon steel.
