Back to your question, it depends on what you want: either a collectible or a shooter.
If you really want to learn, apart from books of course, you cold get a cheapish Luger like a P08 made by MAUSER towards 1942, even a mismatched Russian capture, as a first luger would do, you could learn how to take it down and reassemble without the fear of ruining it.
