GT,

Good question. The normal 'wear and tear' parts with the ejector spring as number 1, as it is the part that is most likely to break during use. Most modern repros are pretty bad.

My top 5:
-Ejector.
-Extractor.
-sear bar leaf spring.
-side plates with functional trigger lever.
-main leaf spring for 1900 models.

I can hook you up with a construction drawing for the M1900 leaf spring if needed.

I almost forgot an important one:

The artillery luger front sight bits (there is a little spring in there as well). The LP08 front sights are notched and the first notches are usually worn off, causing the sight to jump forward at recoil.
