The grip safety is part of the original design. It's only an automatic safety feature and has nothing to do with the trigger or accuracy. The basic idea is, if you are not griping the gun, the sear bar gets blocked so the gun won't fire.
It was deleted in the German Army and Navy contracts because of feed back from the units that received test guns. In fact, even if this automatic safety is a good feature in preventing a careless operator from shooting himself, In war conditions it can represent a drawback if you find yourself in a position of not being able to grip the gun firmly but still need to shoot it.

In short, even though the P.08 does not have a grip safety Mauser still made pistols of the 1906 pattern well into the thirties (the Portuguese GNR contract being a good example).

It's incredible, to it seems almost impossible that after 70 years they can still dig up relics so well preserved like those.
This reminds me that a old friend of mine was a numismatic and on week ends used to go to places with some sort of big metal detector to look for buried ancient coins.
